Zucchini Brownies

2 c grated zucchini
1/2 c oil
1 1/2 c sugar
2 tsp vanilla
2 c flour
1/4 c cocoa
1 1/2 tsp baking soda
1 tsp salt
1/2 c nuts (opt)
Mix zucchini, oil, sugar and vanilla. Add dry ingredients and mix WELL. Bake in greased 9x13 at 350 for 30 minutes.

As you might have noticed we have a lot of Zucchini over here. So I'm posting these recipes because I've tried them and think that they are worth passing on.
